Why We Chose It
It wasn’t just local food — it was local drinks, too. Why? Because we didn’t have a perfect highway system to import them on. It was commonly understood that transporting water — except for cooling train engines — was an impractical use of energy. So if we wanted soda, it had to be bottled locally. It’s a small but telling hint at how our celebrated highway system slowly and slyly began to govern the horsepower of our local economy.
