Leftover pizza may have just earned a surprising nutritional upgrade. Researchers studying how starchy foods behave when cooled found that pizza crust—along with rice, pasta, and potatoes—develops what’s called “resistant starch.” Once cooled below about 40 degrees, those starches link into chains that act more like fiber than carbohydrates, changing how your body processes them. North Dakota State University is beginning the search for its next president, and the State Board of Higher Education has set the process in motion. With David Cook preparing to leave for Iowa State, the search committee voted to hire Academic Search, a national firm, to guide the effort. What has the west coast got that we haven’t got . . . there is still a mild exodus to the west coast . . . slow to move, serious thinking people both here and there forecast disaster for many who go to that area . . . now, particularly . . . and there is a good deal to be done that might prove more profitable here . . . in the long run . . . .
Why we published it: North Dakota continues to hemorrhage talented people to other places. If there is one challenge we need to keep chipping at, it's this one. Our economy, our institutions, our businesses, they all require people, and the cost of losing them is hard to calculate.
Staff Sgt. Melvin Eastvold, 26, machinegunner with an infantry unit, died Nov. 14 from wounds received in action in France, the war department this week notified his parents, Mr. and Mrs. John Eastvold, farmers seven miles south of Ruso.
